When winter arrives and much of the garden retreats, a good design really comes into its own. A well-planned garden should look just as considered in December as it does in June and that’s where structure becomes essential. At this time of year, shape, form, texture and subtle colour take centre stage.
At Verdis, we always encourage clients to think beyond summer flowers. By choosing the right mix of plants, your garden can remain visually engaging throughout the colder months. Here are some of our favourite plants that bring structure and interest to the winter garden.
Evergreen Shrubs: The Backbone of the Garden
Evergreen shrubs are the foundation of winter structure. They provide year-round form and help anchor borders when herbaceous plants have died back.
- Box (Buxus sempervirens) – Ideal for low hedging, topiary and formal shapes, box adds strong lines and definition. Alternatives such as Ilex crenata or Lonicera nitida are also excellent where box blight is a concern.
- Yew (Taxus baccata) – A classic choice for hedging and structural planting, Yew offers deep green foliage and responds beautifully to pruning.
- Skimmia – Compact and glossy, skimmias are perfect for shaded areas and reward winter gardens with decorative buds and berries.
These plants give the garden its underlying framework, ensuring it never feels empty or unfinished.
Trees with Striking Bark
In winter, bark becomes a key feature. Without leaves, the structure and colour of tree trunks and branches are revealed.
- Birch (Betula) – Known for its silver or white bark, birch trees add lightness and contrast to the winter garden.
- Dogwood (Cornus) – Varieties such as Cornus alba and Cornus sanguinea offer vivid red, orange or yellow stems that glow on dull days.
- Paperbark maple (Acer griseum) – A slower-growing tree with beautiful peeling cinnamon-coloured bark, perfect as a focal point.
Position these plants where they can be seen from the house to enjoy them throughout the season.
Architectural Evergreens and Statement Plants
Bold, sculptural plants bring a contemporary edge and strong visual interest in winter.
- Phormium (New Zealand flax) – With sword-like leaves in greens, bronzes and reds, phormiums provide year-round drama.
- Fatsia japonica – Large, glossy leaves add a lush, architectural feel and thrive in sheltered, shady spots.
- Sarcococca – Compact, glossy foliage with the added bonus of beautifully scented winter flowers; ideal for sheltered or shaded spots.
These plants work particularly well as focal points or repeated forms within a planting scheme.
Winter Interest from Berries, Seed Heads and Flowers
Some plants shine in winter thanks to berries, seed heads or seasonal blooms.
- Holly (Ilex) – Classic and festive, holly provides glossy foliage and bright red berries when both male and female plants are present.
- Viburnum – Many varieties offer winter flowers, fragrance or berries, adding both beauty and wildlife value.
- Hellebores – Often called the Christmas rose, hellebores flower through winter and early spring, bringing subtle colour when it’s most welcome.
These plants add layers of interest and help create a garden that feels alive even in the depths of winter.
Ornamental Grasses: Texture and Movement
Many ornamental grasses come into their own in winter. Their dried seed heads and stems catch frost and low sunlight, adding movement and atmosphere.
- Miscanthus – Tall and architectural, miscanthus provides height and drama, particularly when backlit by winter sun.
- Calamagrostis ‘Karl Foerster’ – Upright and tidy, this grass holds its shape well through winter and suits both contemporary and traditional gardens.
- Stipa – Fine-textured and elegant, stipa adds softness and gentle movement even on the coldest days.
We recommend leaving grasses uncut until early spring to maximise their winter impact.
